Easy Dinners to Make During the Workweek

Now that I work 40 hours a week again, I remember the struggle of making dinner right after work. The workweek is a struggle already, but throw dinner on top of that? It seems overwhelming at first, but fear no more! There are easy dinners out there that you can make during the week, still leaving time for relaxing with your loved ones or just your music.

Meatball Subs - the cheap, homemade way

You read that right…you can make meatball subs. And it is super easy! I will give you the general ingredients first. The measurements are up to your discretion, depending on how hungry you are at that moment.

Ingredients: store-bought meatballs (freezer or fresh deli meatballs work great), hoagie rolls, mozzarella cheese, Italian seasoning

You can cook these meatball subs in a stove-top pot first, and then in the oven to finish the crispiness. Cook the meatballs in their sauce on the stove-top until they are fully cooked through, and then once the meatballs are fully cooked, you lay them in the hoagie roll with the roll facing up. This will help with the meatballs not falling out. Cook until the cheese is browned on the subs, and they are ready to eat! You can cook your meatball subs in the oven at 350 Degrees Fahrenheit since you are only browning the cheese.

(Mostly) Anything in a Crockpot

Have you ever heard of the saying “set it and forget it”? I believe that it originates from the Crockpot since you can choose how long your food cooks for, depending on temperature. You can cook so many recipes for dinner in a Crockpot! As long as you set it in the morning before you leave for work, or put it on the second you get home, you can make (mostly) anything in a Crockpot.

Here are some ideas:

  • chili

  • beef stew

  • meatballs

  • soup

  • chicken & dumplings

  • any chicken recipe

  • French Dip sandwiches

  • pulled pork

Just find the recipe you want by a quick Google search, depending on your mood, and you are on your way!


Marinated Grilled Chicken Sandwiches

Have you ever marinated chicken before? I haven’t marinated chicken until about 1 year ago when my husband wanted me to make marinated chicken sandwiches for dinner again! Marinating the chicken is so easy. The longer you marinate the chicken in the fridge during the day time hours, the more the flavor will infuse into the chicken.

We love this recipe because it is so simple, and tastes great if you marinate it for 30 minutes or 4 hours. Ideally, you would cook this on a grill. But if you do not have access to a grill, a simple George Foreman grill will work wonders for grilling your chicken.

Make sure you cook the chicken to the proper temperature (meat thermometer is a must) and then put that chicken on the buns! Top however you choose, and you are onto Flavor Town! Sorry, I’ve been watching too much Guy Fieri lately.

Rotisserie Chicken Shredded Sandwiches

Have you eaten the rotisserie chickens available in the meat section of the grocery store? If they are freshly cooked, these rotisserie chickens can be easily shredded apart with a simple fork. You can shred the chicken when it’s hot for maximum effect, but it won’t hurt the quality of your dinner if you wait 30 minutes or so.

You can eat rotisserie chicken sandwiches in any bread of your choice! I tend to stick to sweet Hawaiian Rolls or hoagie rolls. You can also coat your shredded chicken in a sauce of your choice! Barbecue sauce is typically my move. Let me know if you like making these shredded sandwiches!
